Vada Pav Recipe

Vada Pav is a popular Indian street food recipe mainly prepared with pav bread and deep fried batata vada stuffing. Usually, this snack is also known as Indian burger or Bombay burger as it has been adopted from Maharashtrian or Marathi dishes. Generally, it is served as an evening snack, but can also be adapted for breakfast.

Mumbai or earlier known as Bombay is famous for its fast life, it can also be seen originally in its Mumbai or Marathi cuisine. Most of the streets or any popular and attractive migratory site in Mumbai is filled with innumerable vendors and innumerable fast food dishes. Vada Pav is one such easy and delicious fast food dish, which is full of carbohydrates and fiber.

The Vada Pav recipe is very easy to prepare and assemble and is made immediately and is different from the traditional burger recipe. An important part of any good vada pav recipe is found in its crispness and masala vada or batata vada. These patties are a little different from the traditional alu bonda or vegetable bonda. Originally, batata vada stuffing is made from potatoes without a combination of onions or peas. In addition, it has a strong taste of garlic, ginger and coriander leaves. Additionally, the patties are generally oval in shape compared to the round bonda. That being said, it is not compulsory to come round the boondas because then later it is pressed while collecting.

Ingredients for Vada Pav

2 Tsp oil
½ Tsp mustard
Pinch of asafoetida
Some curry leaves
1 Inch Ginger , ground
2 Layers garlic , powdered
1 Chili , finely chopped
2 Tsp coriander , finely chopped
4 Tsp turmeric
2 Potatoes , boiled and mashed
½ Tsp salt
1 Tsp lemon juice

¾ Cup Gram Flour
1 Tsp rice flour
4 Tsp turmeric
4 Tsp red chilli powder
Pinch of asafoetida
4 Tsp salt
¼ Tea spoon baking soda
½ Water
Oil , for deep frying

6 ladi pav / dinner rolls
7 Green Chillies
6 Tsp green chutney
3 Tsp tamarind chutney
3 Tsp dry garlic chutney


First, put 2 tsp of oil in a large pan and add ½ tsp mustard, a pinch of hing and some curry leaves and grumble.

Add 1 inch ginger, 2 cloves garlic, 1 chilli, 2 tablespoons coriander and fry well.

Next, add 4 teaspoons of turmeric and fry for 30 seconds.

Next, add 2 boiled and mashed potatoes and ½ tsp salt.

Mix well and make sure all the spices are well combined with the potatoes.

Turn off the heat and add 1 tbsp lemon juice.

Mix well and potato mixture is ready. Keep it separate.

Next, prepare gram flour batter by taking 3 cup gram flour, 1 tablespoon rice flour, ¼ teaspoon turmeric, ¼ teaspoon chilli powder, a pinch of asafoetida, ¼ teaspoon salt and ¼ teaspoon baking soda.

Add ½ cup or water as required. Prepare smooth and lump free batter.

Now make a ball shaped potato mixture. I like my vada to be round instead of flat, flatten the balls a little if you want.

Dip in prepared gram flour batter and coat well.

Fry deep in hot oil. And keep stirring it.

Fry the vada on medium heat till golden and crisp.

Dry the vada on a kitchen paper to absorb excess oil. Set aside

Now turn off the heat and fry the green chillies - be careful of splashing the oil.

Stir occasionally until the blisters appear on the chili.

Take out the fried chillies on the kitchen paper to soak up the excess oil. Set aside

Now add 2 tablespoons water to the remaining gram flour batter and prepare churan by pouring it in hot oil.

Fry the churan on medium flame until golden and crisp.

Dry the chura on kitchen paper to soak up the excess oil. And keep it separate.


Now without cutting the Ladi Pav completely, cut it in half from the middle.

Spread 1 tsp green chutney, ½ tsp tamarind chutney and ½ tsp dry garlic chutney on one side of the loaf.

Put the prepared vada in the center of the pav.

Add some prepared powder and place the fried chillies on the vada.

Finally, press the vada pav and serve immediately.
