Saddle rolls or Frankie recipes are one of the simplest snacks. Basically you can try this recipe with your leftover curry and chapati. The leftover curry (preferably dry vegetable) is used as a stuffing and rolled into a chapati. However, there is significant flavor and lip-smoky Frankie spice used in this recipe.

Ingredients for Potato Frankie


FOR BREAD DOUGH:

1 Cup wheat flour
1 Cup flour
½ Tsp salt
2 Tsps oil
Water , to knead

FOR POTATO PATTIS:

2 Tsps oil
2 garlic , finely chopped
1 inch Ginger , finely chopped
1 chili , finely chopped
3 tbsp tomato sauce
2 Potatoes , boiled and mashed
1 Cup Paneer , Grated
½ Tsp salt
2 tbsp coriander leaves , finely chopped
Oil , for frying

FOR CHILI VINEGAR:

½ Cup Vinegar
2 chilies , finely chopped

FOR FRANKIE MASALA:

1 tbsp chilli powder
½ Tsp turmeric
1 Tsp cumin powder
1 Tsp coriander powder
½ Tsp garam masala
1 Tsp chaat masala
1 Tsp mango powder
4 Tsp black pepper powder
½ Tsp salt

FOR FRANKIE:

Green chutney
Onion , finely chopped
tomato sauce
Cheese , great

Method How to Make Potato (Aloo) Frankie Recipe


PREPARATION OF BREAD:


First, in a large bowl take 1 cup wheat flour, 1 cup maida, ½ tsp salt and 2 tbsp oil. Mix and make sure everything is well combined.

Add water and knead the dough as required.

Knead smooth and soft dough. Cover and keep aside for 20 minutes.

Knead again and make a ball-shaped dough

Dust with wheat flour and roll evenly.

Add the rolled dough to the hot griddle with oil.

Cook for a minute and flip.

Grease with oil and cook both sides of the bread.

Now the roti is ready. Keep it aside.

PREPARING CHILI VINEGAR:


First take ½ cup vinegar and 2 chilies in a small bowl.

Mix well and keep the chili vinegar aside for 10 minutes.

PREPARING FRANKIE MASALA:


First of all take 1 tbsp chilli powder, ½ tsp turmeric, 1 tsp cumin powder, 1 tsp coriander powder, ½ tsp garam masala in a small bowl.

Also add 1 tsp chaat masala, 1 tsp amchur, ¼ tsp chilli powder and ½ tsp salt.

Mix all the spices well. Now Frankie Masala is ready.

PREPARATION OF POTATO PATTIS:


First heat 2 tablespoons oil in a large pan and add 2 garlic, 1 inch ginger, 1 chilli.

Add 3 tbsp tomato sauce for a minute.

Also, add 1 table spoon of prepared Frankie Masala and cook for a minute.

Now add 2 potatoes, 1 cup cottage cheese and ½ tsp salt.

Mix and make sure everything is well combined.

Also, add 2 tablespoons coriander and mix well. Potato mixture is ready.

Now grease the hands with oil and prepare a patties.

Fry it on medium heat till it becomes golden color. Keep aside.

FRANKIE ASSEMBLING:


Take bread first and spread green chutney in it.

Place the patis on top of the sauce.

Add finely chopped onion, 1 tsp chilli vinegar and the prepared Frankie masala over it.

Also, top with tomato sauce and grate cheese over it.

Roll a little bit and cover with butter paper.

Finally, enjoy Potato Frankie with more tomato sauce.
