Method for  Lasooni Palak

To make lasooni palak, first clean and wash the spinach (palak). Put the water in a pan to heat, when the water comes to a boil, put the spinach in the pan.

Then boil the spinach for two minutes. If the spinach is not boiled too much, then its green color will go away. After two minutes, turn off the gas and remove the spinach and put it to cool. What happens from this is that the color of spinach remains green, spinach is not to be kept in cold water. Take out the spinach in a plate with cold water, grind half the spinach with this spinach and finely chop half the spinach.

Put the pan on the gas and add oil to it. When the oil gets hot, add cumin seeds. When the cumin seeds crackle, add garlic to it and roast it till it becomes golden, then add onion and fry it till it turns color.

Once the onion is brown colored, add coriander powder, turmeric powder, red chilli powder and green chilli and stir. Now add chopped half spinach and fry for two minutes while stirring, then add spinach puree to it and mix while stirring.

Add salt while stirring and add curd to it. I am adding curd to it. If you want, you can also use cream or fresh cream instead of curd. Stir the curd in the spinach and mix well. Now add a cup of water and garam masala to it.

Cover the pan with a lid and let it cook for 5 to 7 minutes and open it after a certain time. Our spinach is ready, now we add a tadka to the spinach to enhance its taste.

After adding ghee in the tadka pan, when the ghee is kept on the gas, add cumin seeds, red chillies and a teaspoon of garlic and roast it till it turns golden. Because we are making garlic spinach, it should have more garlic flavor then add this tempering to the spinach.

It takes yummy to see garlic spinach (lasoni palak) and there is no answer in eating it. You can eat it with rice, naan, paratha or puri.
