Dry kachori is a wonderful dry snack in which the outer layer made of fine flour is crunchy and has a spicy mixture of spices inside. Unlike normal shortbread, it can be kept from a few weeks to months and you can enjoy it anytime.
Ingredients for Dry Kachori Recipe
For Kachori Outer Layer:
1½ cups maida
3½ tablespoons oil
Salt
For Spicy Stuffing:
1/2 cup Papdi Gathia or Sew (coarsely ground) or roasted gram flour1½ tsp Date Tamarind Chutney
1/4 tsp turmeric powder
1½ tsp red chili powder
1/2 tsp garam masala powder
1/4 tsp black pepper, coarsely crushed
1/2 tsp dry mango powder
1 tsp mole
1 tablespoon dried coriander seeds
1 tbsp fennel seeds
1/2 tsp poppy seeds
1/4 cup cashews (cut into thick pieces)
10-12 raisins
2 tablespoons almonds (cut into thick pieces)
2 tablespoons ground sugar (powder)
Salt
1 tbsp oil for frying
Method to Make Dry Kachori Recipe
Grind the Gathia or Sev in a grinder or fry the gram flour till it becomes golden.
Heat 1 tbsp of oil in a pan on medium heat. Add powdered gathia (or sev or roasted gram flour), dates tamarind chutney, sugar and all the stuffing except salt; Fry on low heat for 30 seconds.
Add powdered gathia (or sev or roasted gram flour), dates tamarind chutney, sugar, and salt. Mix well and fry for a minute. Turn off the gas and let it cool for 4-5 minutes. Dry and spicy stuffing is ready for kachori.
Take maida, salt, and 3½ tablespoons oil in a bowl and mix well. Add hot water as required and knead a slightly firmer (like paratha flour) but soft dough.
Divide the dough into 16 equal portions and make dough from each of them. Take the dough and place it on top of the circle. Roll it into a small puri with a diameter of 3-4 inches.
Place 1-2 tbsp of mixture in the center of the puri. Wrap the mixture around and seal its edges and shape the ball.
Heat oil in a pan for frying on medium heat. When the oil is medium hot, add 5-6 raw balls in it and fry it on low heat till it becomes light brown. Likewise, fry all the kachoris.
Spicy Dry Kachori is ready. Serve it alone or with green chutney. You can keep it in a box at room temperature for 15 days
Dry kachori is a delicious snack that tastes great with any dessert or with green chutney or tamarind chutney.
