This is a sweet stuffing paratha. The stuffing is called Puran in Marathi and the roti is called Poli. This means that it is a stuffing bread.Different states identify it by different names. And with this the method of making stuffing also various a little bit. The method of making Puran Poli in Maharashtra and Gujarat is almost identical. The only small difference is that lentils are used differently in stuffing. And its method of serving is also different.

Maharashtrian way : It is called Puran Poli. Stuffing is made from gram lentils. It is served with katachi mango and batatyachi bhaji. Many people also eat it with milk.

Gujarati way: It is called Vedmi. Stuffing is made from Tuvar. It is served with kadhi and sukhi bhaji.

If you are making it for the first time, it can also burst while rolling. There is nothing to worry about, where it gets torn and apply a little dry flour, it will be cured . To make the perfect Puran Poli, you should keep trying again and again. The first one will not be right, the second will not be right, no matter the third will definitely be good and right.

Ingredients of Puran Poli


For Puran:

¾ cup arhar dal or chana dal
2 ½ cups of water
¾ cup jaggery or sugar
A pinch of cardamom powder
3-4 baton saffron

To make Poli Dough:

1 cup wheat flour (chapati flour)
Salt to taste
1 tbsp oil
⅓ cup water or little more
Ghee for cooking

Method How To Make Puran Poli


Wash the lentils thoroughly with water 3-4 times. If using arhar dal, soak it for 30-45 minutes. If using chana dal, soak it for 1 hour to 1 ½ hours. Here I have taken arhar dal.

Remove the soaked water later. Take the lentils in the cooker and add 2 ½ cups of water to it. Keep the gas flame medium and cook it with a lid till it comes to 4 cities. The lentils should not be completely melted. It will be soft yet its grains will be different.

Remove the lentil water with a sieve and keep it aside (with this water we can make kachchi mangoes.) Let the lentils drain by pressing a little.

Now take the lentils in a pan or pan. Add jaggery to it and keep the flame on medium mix it.

As the jaggery melts, this mixture will become thin. Cook it continuously while stirring.

It will get thicker in a while. Keep stirring it continuously and scraping the sides of the pan.

It will get thicker. We are very close now.

Now mix cardamom powder and saffron in it.

This Puran is ready now. How to check Spread a spoon in the center of the mixture. If the spoon is standing it means it is thick enough. If it falls, it means it is still thin, cook it more and check again.

Allow the stuffing to cool completely. Till then we take dough.

Take flour, salt in a bowl. Add oil to it. Mix it well by hand.

Later add water slowly and let the dough go. It should be soft like paratha flour. Cover it and keep it for 15 minutes.

Now Puran must have cooled, divide it evenly into 6 parts and make its shells. In which we have made Puran, keep the pan in the same way, in this we will make kachchi mango.

Mash the flour well once and divide it evenly into 6 equal parts and after making the shape of the circle by hand, press the palm and make the balls.

Now take a dough and roll it into a round shape of 3 inches diameter.

Put puran in the middle and take it off from all sides and close it.

Carefully flatten it with the help of hand.

Now wrap it in dry flour and start rolling it again with light hands. It should be round in shape with a diameter of 5-6 inches.

Put the tawa on another medium gas for heating. Place the rolled poli on a hot pan and cook until small bubbles come on its surface.

And turn it over and cook it.

Now apply ghee on its upper surface.

Turn again and compress while pressing lightly.

When brown chitti comes on the lower surface, apply ghee and flip it again.

While pressing on the other side, roast till the brown chitti comes.

If it belly up properly then it will definitely bloom.

Now put it in a plate and put more ghee on top and serve.

Puran Poli is often made on festivals like Holi, Diwali, Gudi Padwa, Ganesh Chaturthi.
