What is Kadai Chicken?

Ingredients for Kadai Chicken
200 chicken grams
1 large capsicum
2 large tomatoes
1 large onion
Fennel seeds
Dried Coriander Seeds
Mustard seeds
Cumin Seeds
Ajinomoto
Salt
Garam Masala
Dried Fenugreek Leaves
Coriander and Cumin Seeds Powder
Red Chili Powder
Turmeric Powder
Garlic and Ginger Paste
Pure Ghee
Sugar
Poppy Seeds
Magajtari or watermelon seeds
5-6 Cardamoms
6-7 Cloves
2 small pieces of cinnamon
1/4 teaspoon Shah Zira
A little color
Some Coriander Leaves
Method to Make Kadai Chicken
First of all, make a puree of poppy seeds and Magjatari, add some water to it so that the puree becomes soft, now puree is ready.
Heat small spoon of ghee, when the ghee becomes hot, add chicken and fry it lightly for some time.
Now roast onions, tomatoes and capsicum in ghee for 1-2 minutes.
Again put 1 tsp ghee in the pan, now put cloves, cardamom, cinnamon in it.
Now add 1/2 tsp mustard seeds, 1/2 tsp cumin seeds, 1/2 tsp dried coriander seeds, 1/2 tsp fennel seeds, garlic and ginger paste and mix it for 1 1/2 minutes. Fry it
Now add poppy seeds and magjatari paste in it and cook it till it turns light brown, cook it on low flame for about 10-12 minutes and keep stirring it continuously so that it does not stick to the surface.
Now add 1/2 tsp coriander powder, 1/4 tsp turmeric powder, 1/4 tsp red chilli powder, 1/2 tsp garam masala, a pinch of Ajinomoto, 1/2 tsp sugar and a little color.
Now add chicken, salt to taste, add Kasuri methi, after 5-6 minutes the cauldron chicken will be ready, after 5-6 minutes add vegetables.
Again cook it for 2-3 minutes so that all the flavors mix well together, now the cauldron chicken is ready, then garnish it with tomatoes, onions, capsicum and green coriander.
